
And another new set of recipes...
Fiesta Lime Chicken
Marinade:
1 c. water
1/3 c. teriyaki sauce
2 T. lime juice
2 t. minced garlic
1 t. liquid smoke
1/2 t. salt
1/4 t. ground ginger
4 chicken breasts
1 c. shredded cheddar/monterey jack cheese
Sauce:
1/4 c. mayonnaise
1/4 c. sour cream
1 T. milk
2 t. minced tomatoes
1 1/2 t. chopped green chilies
1 t. minced onion
1/4 t. dried parsley
1/4 t. hot pepper sauce
1 pinch salt, paprika, cayenne pepper, ground cumin, chili powder, ground pepper
1. Mix the marinade ingredients (water-ginger) together and marinate chicken for at least 3 hours.
2. Separate chicken when done and grill until cooked.
3. Mix the sauce ingredients together.
4. Place chicken in a 9x13 pan and spread the sauce on top. Sprinkle 1 cup of chedder/monterey jack cheese on all.
5. Broil 2-5 minutes until cheese is melted.
Though the recipe seems intensive, saturated with ingredients, and lengthy (as the chicken marinates...), it's actually quite simple! The marinade took literally two minutes to mix up. Cooking the chicken takes the longest. I'm a fan of letting it marinade overnight.
Dilled Peas and Walnuts
2 c. shelled pes or one 10-ounce pkg frozen peas
1/4 c. chopped onion
1 T. margarine or butter
1 1/2 t. snipped fresh dill or 1/2 t. dried dillweed
1/4 c. broken walnuts, toasted
To toast walnuts: spread in a single layer in shallow baking pan. Bake at 350 degrees for 5-10 minutes or till light golden brown, watching carefully and stirring once or twice.
Cook the peas and onion, covered, in a small amount of boiling water for 10-12 min. or till crisp-tender. Drain well. Stir in the margarine or butter, dill, 1/4 t. salt, and 1/4 t. pepper. Heat through. Sprinkle with walnuts. Makes 4 servings.
Wow...I mean, all I can say is Wow! Add a small loaf of focaccia bread and this meal is an instant hit! Guess what I'll be having for lunch tomorrow... :)
